The menu consists of scallop and pineapple ceviche; seared salmon with Pinot Noir butter and braised beets; short ribs with Swiss chard, garlic scapes, and red wine shallot sauce; and rhubarb and berry gratin with garden herbs for dessert; accompanied by 4 specially chosen wines.
